Lunch?
What kinds of things do you eat for lunch? I'm looking for ideas that are QUICK (my daughter doesn't usually nap around lunch hour so it needs to be something that doesn't take too long) but also something not too high in protein because I seem to aaaaalways go over my protein, so looking for some different ideas

I can usually fill up on a huge salad pretty easily. I've got pre-washed lettuce, pre-washed grape tomatoes, pre-washed baby carrots (I think you'll notice a trend here...), and can throw all of that together into a bowl in a few seconds. Instead of salad dressing, I drizzle no more than a tbsp of olive oil and toss the whole thing together. You mentioned that you don't want protein, but if you want something with a bit more 'heft' in your salad, you can always throw in some chickpeas (take 'em straight out of the can & drain...pretty easy), or flaked tuna (same deal...out of can and drain).
Otherwise, I make myself a basic sandwich and call it a day: whole wheat bread, thin-shaved smoked turkey, lettuce, pepper jack cheese, and a dab of spicy brown mustard. Done!0
