Cracking Eggs

I eat an egg white omelette (with spinach and bacon) almost every morning. Almost every morning I have at least 1 bit of shell in my omelette.

How can you crack an egg so a piece of shell is less likely to sneak in? I always check the bowl but I can never find the culprit!

I just try to crack them on a sharp edge it makes for a cleaner split of the shell and I usually have good results. That being said I had to fish a piece of shell out of my egg whites when I was cooking them this morning...lol

When you've given the egg a crack, rather than push your thumbs IN, use your thumbs to pry it apart. It takes a wee bit of practice, but it'll get there.

And if you DO drop some shell into your egg, just use another bit of shell to scoop it out. I used to get frustrated chasing bits of shell around in egg-whites with my fat fingers, until someone pointed out that shell would be the perfect scoop to get it out.
