Cocoa-Nut Butter “Truffles”
Here’s the perfect energy boost before or after the gym! It’s high in protein and easy to pack up and take on the go. These “truffles” taste like an indulgent dessert but are less than 100 calories each!
1½ cups dry old-fashioned oatmeal
1 cup fat-free powdered milk
3 tablespoons unsweetened cocoa powder
2 scoops (4 tablespoons) The Biggest Loser
chocolate protein powder
2 tablespoons ground flaxseed
2 packets Truvia or other natural sweetener
½ cup unsweetened vanilla almond milk
¼ cup all-natural almond butter or peanut butter
1½ tablespoons vanilla extract
½ cup chopped almonds or walnuts (optional)
1. In a large bowl, mix the oatmeal, powdered milk, cocoa, protein powder, flaxseed, and sweetener.
2. In a separate small bowl, place the almond milk and nut butter. Microwave for 1 minute. Add the vanilla and stir well.
3. Add the nut butter mixture to the dry ingredients and stir to combine. There will be about 2 cups of mixture. Stir in the nuts, if desired.
4. Using a 2-tablespoon scoop, form 16 "truffles" and refrigerate until firm. Wrap individually and store in the fridge.
Per truffle: 80 calories, 5 g protein, 10 g carbohydrates (3 g sugars), 3 g fat (0 g saturated), 0 mg cholesterol, 2 g fiber, 50 mg sodium
Note: Adding ½ cup of nuts to the recipe will increase the calories to about 100 calories per truffle. Makes 16 truffles.
