Here's a good "water myth" link from the highly reputable Scientific American:

Here's a Mayo clinic one on coffee being as good as water for hydration:

Thank you.
I would also need one about red meat and the lipid hypothesis0 -
as far as eating after a certain time at night I'm sure you could google that and find many facts. Calories are calories but it is the late evening or night carbs that hurt you because they contain sugar and cause an insulin surge. That takes a little explaining as to how that effects the results you see on the scale the next morning if you weigh daily. Personally I have found that if I eat my carbs before 2 pm I get better results. Sorry I don't have a link or web site merely a tip.0

I don't have specific links to the questions you mentioned, but in general, the following sites are managed by a couple of highly educated, reputable gents who have articles on many nutrition and fitness-related topics. They usually include links to the scientific studies in their articles.
Lyle McDonald: www.bodyrecomposition.com
Graeme Thomas: graemethomasonline.com0 -
This fabulous article contains links to research busting many diet myths, including more on water, eating after 8pm and eggs raising cholesterol:

pubmed.gov -- one of the best free resources for peer reviewed journals with open access. search whatever you like -- it takes some time to analyze and they won't all give you a "straight" answer but there are some really interesting studies.0
