Spicy Chicken "Fried" Rice

This is a new favorite of all of mine, my friends, neighbors and family and each serving is less than 400 calories! Nothing is actually fried, or cooked in oil. I use water and chicken broth instead!
2 cups rice (I used white)
8 ounces chicken breast
1 cup peas
1 ear corn (cut from ear)
2 carrots (diced small)
1 bell pepper (diced small)
.25 cup panda express kung pao sauce
.25 cup soy sauce
1 cup egg beaters
2 cups water
2 cups chicken broth
red pepper to taste
garlic powder to taste
In a pan add corn, peas, carrots, bell pepper, rice, water and chicken broth. Bring to boil, then simmer until rice is cooked and liquid is gone. (Roughly 20 minutes)
While the rice is cooking, grill 8 ounces of chicken breast (I used the Foreman) and scramble 1 cup of eggbeaters. Do not use oil, either use a non-stick pan or a little Pam.
When rice is done, add diced up cooked chicken, eggs, Kung Pao sauce, soy sauce, garlic powder and red pepper.
