Best Tofu Parmigiana ever!

I made this Friday night and it was dee-licious! If you're going to make it, be sure to read the reviews about tips on the tofu. I used pasta sauce instead of what the directions say. Add veggies, too! YUM!

    Be sure to use extra firm tofu. Someone said to freeze it first then let it thaw for 3 hours but I didn't have time to do that. I took someone else's tip and after squeezing out the water and slicing it, I baked it until it was starting to turn golden brown. Then coat the slices in flour, then egg, then breadcrumbs. What would be healthier alternatives? Whole wheat flour? What could be substituted for bread crumbs, if anything needs to be? Anyway, then fry them; I used nonstick spray instead of oil and it worked great. Then pour some pasta sauce in the bottom of a dish, then the tofu slices, then some veggies, more sauce if you want, then cheese. Bake it and there ya go!
