hi!
i am looking for simple and realistic ways to get more fibre in my family's meals.
for starters, i was thinking about adding flax seeds to things, but what?
i'm not fancy in the kitchen, and sadly i'm a bit picky.
but i am open to change somewhat...baby steps right?
can anyone help me?

Some foods to consider when looking for more fiber:
beans, lentils, corn
This recipe http://www.foodieparent.com/2011/09/fighting-yuck-face-lima-bean-justice-cooking-with-kids/
is DELICIOUS, and has lots of fiber. You can use less bacon to reduce the fat content, but otherwise it's all good. I used frozen limas and corn for a quick, easy, healthy dish. Careful- don't eat too much of it- I got a little heartburn from eating too much.

I like to get my fiber using beans because it's easy. Just figure out what kind of beans you like. I like black beans, but you can use kidney beans, garbanzo beans or lentils as you like. Some of my fav ways to use them include:
3 bean salad- kidney beans, wax beans, green beans (1 can each) with about 1 cup low sugar italian dressing)
bean chili- Just what it sounds like. I use black beans 'cause I love 'em.
Brazilian black beans- If you like things hot, this is for you. But you can tone it down, too, by using milder tomatoes. 1 can black beans, 1 can fire roasted diced tomatoes. Cook 'em in the saucepan until hot. For a twist you can add a squirt of lime.
