Strawberry Salad with Poppy Seed Dressing


3 tablespoons sugar
3 tablespoons light mayonnaise
2 tablespoons fat-free milk
1 tablespoon poppy seeds
1 tablespoon white wine vinegar
1 (10-ounce) bag romaine lettuce
1 cup sliced strawberries
2 tablespoons slivered almonds, toasted

Combine first 5 ingredients in a small bowl, stirring with a whisk.

Place lettuce in a large bowl; add strawberries and almonds, tossing to combine. Divide salad evenly among 6 plates. Drizzle 1 tablespoon dressing over each serving.


Yield: 6 servings (serving size: 1 1/2 cups)

    one of my favorite recipes! But, mine has just a few slight variations... For instance, I have made with romaine lettuce before, but love the taste of spinach with the strawberries! Also, my dressing has an oil and vinegar base... no mayo/milk...

    Here it is:

    Strawberry Spinach Salad
    Prep time: 10 minutes
    Makes approx. 4 servings


    2 tablespoons sesame seeds
    1 tablespoon poppy seeds
    ½ c. white sugar
    ½ c. olive oil
    ¼ c. distilled white vinegar
    ¼ teaspoon paprika
    ¼ teaspoon Worcestershire sauce
    1 tablespoon minced onion
    10 ounces fresh spinach
    1 quart strawberries
    ¼ c. almonds, sliced or slivered


    Notes: Delicious recipe that has gotten a lot of compliments! I originally got it from www.allrecipes.com. When I made it, I adapted the recipe a little, leaving out the sesame seeds and onion, but used onion powder in the dressing – and it was just as delicious! I always cut back on the sugar, too.... I also found that a tightly covered jar worked perfectly for the dressing -- it will separate and needs to be mixed up again before placing on the salad. For the actual salad, you can use all spinach, or a mix of romaine and spinach.
