Any vegans in the house?

Help me - I'm bored of food. I am a dietary vegan. (basically I am a vegetarian but I don't like milk, dairy products or eggs). Since I have been on MFP, I have really reduced my carbs and stodgy foods like potato and pasta, but this has left my diet rather limited to tofu, vegetables, fruit and soya yoghurt. Perhaps I am just craving carbs, but I am feeling a bit bored with the food I'm eating.

If any of you are vegan, please give me some ideas!!

  • I agree with akrzyzewski on beans and lentils. I eat a lot of those in stews and curries. I would also recommend seitan, tempeh, quinoa, nuts, and even homemade veggie burgers. Plus, there are a ton of ways to eat tofu to prevent it from getting boring, like scrambled tofu and tofu "quiche".

    I think www.theppk.com/recipes/ will give you a lot of ideas. Also, lately I've been cooking a lot out of Appetite for Reduction by Isa Chandra Moskowitz.
