    i put black beans and corn in salsa and pour it over chicken ..or make my own tortilla chips and use it as a dip.. black beans in brown rice is good too

    I add black beans to practically EVERYTHING.

    One of my favorites though, is my version of black bean chili.

    Sautee veggies ( I prefer chopped peppers, onions, celery, garlic ) with 1 tablespoon of olive oil unti translucent. Add 2 cans of low sodium black beans ( drained and rinsed ), and 1 can of no salt chicken broth. Heat till boiling, then remove 1 cup and blend till smooth. Add back to pan.

    Brown some extra lean ground turkey, then season it with hot sauce and add to black bean mixture. Makes a decent sized pot, too.

    YUM. I think I know what lunch might be.

    My favorite thing to do with black beans is cook them with corn. Then put it in a tortilla with avocado, salsa and cheese. It makes a good lunch.

    I love black beans!! A really quick recipe that can be altered is a mexican casserole.

    Brown a pound of lean ground turkey with small diced onion and garlic. set aside.
    pour a can of black beans into casserole dish (I usually rinse mine first in a strainer)
    Pour the turkey mixture over the beans.
    top with a small amount of shredded cheese (lower fat cheddar)
    Spread softened cream cheese on top of this
    bake until cheese is bubbly.
    Add shredded lettuce, diced tomato.

    It's FANTASTIC!!!

    I use them in Tortilla Soup:

    32 oz chicken broth
    cooked shredded chicken breast
    black beans
    corn
    rotel
    sauteed garlic
    spices (cumin, chili powder, salt, pepper, oregano)

    Simmer for 20 minutes. You can top with cheese, sour cream, salsa, etc...It's called Tortilla soup because you are supposed to top it with crispy corn tortilla strips or chips, but we skip that.

    I add them to ground beef when I make taco meat. Healthier and cheaper... makes more tacos for the family.

    I have also made a black bean brownie, but I'm not totally happy with the recipe so it needs some tweeking. You can google it to find some recipes of our own.

    We make Black Bean Burritos. Saute onion, jalapeno and bell peppers. Add black beans. Heat. Add Cumin, cilantro, hot sauce or cayenne and alittle lime juice. They're delicious!!

    Similar to what my brother sent me.

    Tortilla Soup

    3 cups shredded pork, or chicken
    2 15 oz. cans black beans un-drained
    1 15 oz. can Mexican stewed tomatoes or Rotel tomatoes
    1 cup salsa
    14.5 oz. can tomato sauce
    Tortilla chips
    Shredded cheddar cheese
    sour cream

    Combine all ingredients, except chips, cheese, and sour cream.
    In a large pot and let simmer at least 20 minutes, (but the longer the better)
    To serve, place a handful of chips into each bowl and ladle soup over chips,
    top with cheese and a dollop of sour cream.



    I have to rethink this one now, and check the sodium... :ohwell:

    I make homemade veggie burgers with black beans!

    1 cup black beans
    small handful of any veggies, diced
    small handful of corn flakes, rice, or breadcrumbs to get consistency
    1 egg
    spices (I recommend garlic, and lots of it)

    Mash together in a bowl, form into patties, lightly flour, and fry for ~10 minutes until hot all the way through.

    Makes two huge patties or 3-4 smaller ones.

    Black Beans & Rice - 6 large servings
    1 pkg Zaterans Low Sodium Black Beans & Rice
    1 can black beans - drained and rinsed
    1 pkg Turkey Smoked Sausage - cut into small pieces
    2 cups frozen corn
    2 + Tbs Franks Red Hot sauce
    1 c Minute Rice (to stretch the recipe for my family)
    Cook Zaterans according to directions but add 1 extra cup of water and the Franks. Cook for 15 - 20 minutes. Add in the minute rice and other ingredients. Cook until liquid is absorbed.
    This is a one pan meal and really easy! Only 403 Calories and 20 grams of protein.

    I used indian style seasonings here, but swap for whatever you like. Really, you could just use a packet of taco seasoning.
