Egg Bake - 189 calories
Here's an easy Egg Bake recipe that I make frequently. I found out it's only 189 calories per serving (1/12th of a 13" x 9" pan) once I entered the recipe into MFP.
1 package Simply Potatoes shredded hash browns (you can use the frozen hash browns, just thaw first, OR fresh 3 1/2 c.)
1 1/2 pounds ham diced
1 tbsp. butter
1 medium onion chopped
1 medium sweet green pepper diced
1 medium sweet red pepper diced
8 eggs
2 cups skim milk
2 tsp. dry mustard powder
Preheat oven to 350 degrees F. Spray a 13" x 9" pan with non-stick cooking spray (Pam). Layer the hash browns evenly in the pan. In a skillet, saute the ham until heated through and drain. Layer ham in pan. In same skillet, melt butter and saute onion and both peppers. Layer in pan on top of ham. Then beat eggs, milk and mustard powder together. Pour evenly in pan. Place in oven for 50-55 minutes until an inserted knife comes out clean.

Sounds really good. I believe that would be a 3" x 3" piece. That's a decent size for a serving.0

I've frozen leftovers before and it's convenient to thaw and heat.0 -
