Mini Lemon Meringue Pies
Found this recipe in a people magazine in the dentist office. I decided to try it since it was "minis" and brought it home and MODIFIED it, entered it into the recipe section here and it comes out to 100 calories. Makes 24 and I think would be a great desert to take to an event, where you won't feel bad eating one
*I always offer to bring deserts to the events so I can make a semi on track or healthy one that I can eat and know I am not throwing off my whole day bigsmile
Mini Lemon Meringue Pies
Makes 24
about ***100 calories****:laugh:
16 oz roll of refrigerator sugar cookie dough chilled
2 egg whites at room temp
1/4 tsp cream of tartar
pinch of salt
1/2 C sugar
1 box sugar free fat free lemon pudding ** made with 1% milk** that's how I logged it
1. Preheat oven to 350, coat mini muffin pan with cooking spray.
2. Place 2 tsp cookie dough into each compartment pressing dough up the sides to form a cup.(you will have left over dough)
3. Bake until edges are golden brown about 10 min. Cool for 20 to 30 min
4. While cookies cool, mix together the pudding with the milk
5. Using electric mixer beat egg whites in a clean dry bowl until frothy 30 seconds. Add cream of tartar and salt and beat on high, gradually adding sugar 1 tbsp at a time, until glossy and stiff about 3 to 4o minutes.
6. Leave cups in tin and fill with 1 tsp lemon pudding and top with a dollop or 1 tsp of meringue.
7. Broil on low until golden 30 SECONDS careful not to burn here!!
Cool 10 min and remove from tin
I made them twice now in 2 weekends per request and have also been asked for the recipe:)

Quick edit as I just double checked the recipe and made sure everything was accurate
It is 108 calories...Something I can still deal with...and everyone else will have no idea ...the taste is still fantastic0 -
This sounds great. I however can't make them at home as Lemon pie is my favorite. 100 cal each is great until you eat 5 in one sitting0
