Chicken Burrito

Not sure if this is technically a burrito, if it's wrapped in a tortilla I call it a burrito.

Last night I was home by myself and looking for something for supper, standing there in the pantry i grabbed a can of chunk chicken breast, a can of rotel tomatos with green chilis, and a can of enchilada sauce that had been in the pantry a while.

I drained the water off the rotel and chicken, and put it in a skillet with half the can of enchalada sauce (a thicker sauce would have been better I think, or taco seasoning, but this is all i had) cooked it to thicken it up a bit.

Put 1/2 serving of refried beans on an Ole Extreme Wellness Tomato & Basil tortilla and added a serving of the chicken concoction, some lettuce and 1/2 serving shredded low fat mexican cheese blend and wrapped it up.

It makes 4 servings, without the beans, lettuce, and cheese it is 158 calories/serv.

With the beans, lettuce, and cheese it is about 250 cals.

Ole Extreme Wellness Tomato & Basil tortilla (68cals)---These are the best tasting low cal tortillas I've ever tasted.

  • Thanks for the tip. I'm gonna try it. I am up for anything tasty that even I can cook and doesn't blow the calorie limit.
