I'd consider a little coconut milk, some diced potatoes, some tomatoes and spinach... You could go all KINDS of ways with this, mm.0

This is how I make it and sorry I don't have exact measurements ( as you know most Indians measure with eyes).
Finely chop med. Onion , garlic & ginger. In a pan heat some oil ( abt 1 tb sp) Put onions ginger & garlic to this and saute till onions are little brown. Add finally chopped tomatoes( 2) and cook some more. Take a can of Chickpeas and drain all the liquid and wash them under rumming water. Once the tomatoes are cooked add the Curry pwd and the chickpeas to pan and mix & cook. Afetr 4-5 mins add about 1-2 cup of water depending how thick/thin you want this. Let it simmer for 10 mins or so and serve with rice or pita.
