Delicious Broccoli Soup!!

I made this soup tonight, and it was SO good!! I made about 5 servings and it is 116 calories per serving!! It's also VERY filling!! I'm going to freeze the other servings so that they stay fresh longer!!
Here's the recipe:
Ingredients:
2 tsp olive oil
2 cloves garlic
1/2 medium onion, finely chopped (about 3/4 cup)
1 stalk celery, finely chopped
1 medium Yukon Gold potato, peeled and cubed
4 cups fresh broccoli, including stems, chopped
2 cups low-sodium or NO sodium added, fat-free chicken broth
1 1/2 cups nonfat milk
Preparation:
Heat oil on medium heat in a soup pot or Dutch oven. Gently sauté onion and celery for 3-4 minutes, until onion is softened. Add potato, garlic, and chopped broccoli, followed by the broth and milk. Bring to a boil, then reduce heat, cover and simmer for 20 minutes, until vegetables are tender.
Allow soup to cool slightly, then transfer to a blender in 2-3 batches or use immersion blender (much easier), and blend until smooth. Return soup to pot and heat gently until ready to serve.
Freezing Method:
Ladle soup into muffin pan or ice trays and put in freezer until frozen. Once they are frozen, transfer them to freezer bags, according to portion size!

Bump! This sounds great. I love these type of soups but they always have lots of cream and cheese and stuff in them. I'm excited to have found a healthier variation. Thanks for sharing !0
