Build my dinner menu

I loooove food, but I don't have any idea what to have for dinner tonight. I need dinner ideas that work within the following:

I have 680 calories, 38 grams of protein, 26 grams of fat, and 79 carbs left for the day, although I don't really care if I go a little over on any of those.

I'm gluten and dairy free and don't eat pork. Other than that, I'm open to any other ideas (I was thinking something high fat - like avocados - but we don't have any).

So... help me build my dinner menu tonight!

    Shred some chicken (if none cooked boil until done then shred) then simmer with diced tomatoes with or without chilis. Put on corn tortillas topped with salsa and lettuce for tacos.

    use corn tostada shells with chicken or use ground turkey with taco seasoning (or your own spices to ensure gluten free), mash black beans with a little salt and water for base and build.

    Baked chicken with seasoning or salsa, quinoa and veggie side.

    turkey chili? an omelete? i'm not very creative in the kitchen.

    add some roasted potatoes and your set C: i like to roast garlic at the same time as well. yummmm

    Oops... I didn't even think to mention that I am highly allergic to artichokes (it seemed too random to expect anyone to suggest it, but apparently not)...

    Here is a GF recipe I recently made that was very easy and delicious...

    Ingredients:
    O Organics - Organic Black Beans - Canned, 1 container (1 4/5 cups ea.)
    Bobs Red Mill - Organic Quiona, 1 Cup (dry)
    Cabbage - Red, raw, 1 cup, chopped
    Onions, Red or White - Raw, 0.25 Cup, diced
    Generic - Green Onions, Chopped, 0.25 cup (100g)
    Safeway - Diced Tomatoes With Onion, Celery & Green Pepper, 1 Can
    2 Avocados
    1 clove garlic, finely chopped
    Onion Powder
    Cumin

    Directions:
    Cook 1 cup dry quiona on stove according to package directions. Meanwhile, saute red onions and garlic in skillet over medium-high heat for about two minutes. Add can of tomatoes, 1 tsp. onion powder, 1/2 tsp. cumin to the skillet and bring to a simmer. Drain black beans and add to the skillet. Continue simmering until quiona is ready. Divide quiona into four portions, top with skillet mixture, and then garnish with fresh chopped red cabbage, green onions and one half avocado per serving. Add salsa if desired.

    Total: calores: 1452 cal, 257g carbs, 21g fat, 62g protein
    Per Serving (4 servings total): 363calores, 64g carbs, 5g fat, 16g protein

    You could add boneless, skinless chicken breast or a mild white fish to this recipe to up the protein without adding too much fat or calories. This is one of my favorite low calorie dinners because I can make it in 20 minutes or less and it's very filling.

    I don't think I have all of the ingredients for that tonight but it looks delicious and I'll have to try it soon!

    Balsamic chicken

    Ingredients:
    4-6 boneless, skinless, chicken breasts
    2 14.5 oz can of tomatoes (fire roasted or Italian style are especially yummy)
    1 large onion, thinly sliced (not chopped!)
    4 garlic cloves
    1/2 cup balsamic vinegar
    2 tblsp olive oil
    1 tsp dried oregano
    1 tsp dried basil
    1 tsp driedrosemary
    1/2 tsp thyme
    ground black pepper & salt to taste

    Optional ingredients:
    a big handful of fresh spinach (2Cups?)
    a little handful of fresh basil, chopped up (1 cup?)


    Preparation:
    pour olive oil on bottom of crock pot (or glass dish if you just want to bake in the oven)
    place in chicken breasts, salt/pepper each breast to taste
    (I added fresh spinach and basil on top of chicken before onions)
    put sliced onion on top of chicken
    add all spices and garlic cloves (we used minced garlic from a jar)
    (If you don't have all the spices above, any Italian seasonings will do)
    Pour in vinegar (I used a bit extra cause I LOVE balsamic!)
    Top with cans of tomatoes

    Cook on high for 4 hours, serve over pasta (they say angel hair, but we used spirals and it was excellent)
    We cooked this one in the oven at 350 for a around an hour and a half; it could also be done in the crock pot on low for 6-8 hours, but only if you check to be sure the liquid doesn't all evaporate. Then of course, it would be too late to eat tonight. Oven is better. Enjoy!

    Obviously, that should have said we used gluten free pasta spirals. I've never found gf angel hair pasta.

    I would enter different things and see what works best for the way you eat. When you find the right combination use it. No one but you knows how you eat.

    I bet it would just dissolve. GF spaghetti noodles work okay, though.
