yummy lunch

Don't you just love when you have a super delicious meal, AND it's good for you? My lunch was to die for and I so wish I had some more.

I made a salad with lettuce, strawberrys, apples, chicken, and cashews with raspberry viniagrette dressing. I had it for dinner last night too, and just may have it for dinner tonight as well.

I was going to make chicken salsa soup (recepie I got from the boards here) but I realized I don't have any brown rice....do I feel like stopping at the store on the way home? Also, I'm not sure I'm in the mood for trying a new dish....and how mad will I be if I don't like it, and I wasted the chicken that I could have made another salad with :laugh: What do you all think? soup or salad tonight?

    I know what you mean, I had a cup of lettuce, and some tuna lastnight with some rice vinager and some litel soy sauce.... It sounds odd....but my god,it was like I grew taste buds and it was the first meal I ever ate!:laugh:

    I love having a big salad!!

    Mine today was romaine & spinach w/ broccoli & cauliflower topped w/ 4oz chicken breast, 1/4 c. fat free feta, and then topped w/ Louisiana wing sauce, picante, and 1 T. Marie's lite blue cheese dressing. Super filling for around 300 cals! :bigsmile:
