Recycle Rotisserie Chicken

You can always take the extra chicken off, shred it, season it and throw it in tacos, or make chicken salad, or even just throw it on top of a green salad. If you don't feel like eating chicken any time soon, you can take the excess meat off and put it in a ziplock bag for the freezer-then take it out when you want to use it.
You can also take the rest of it, bones and everything (take the meat off first) and throw it in a pot with some onion, garlic, maybe a bay leaf, celery stalk and some carrot, to make stock and then make a healthy chicken soup with veggies and some of the leftover chicken that you took off the carcass. I would seriously keel over if someone threw out a half a chicken in our house. :laugh: I even save the bones in the freezer to make stock if I don't have time to throw them in a pot and simmer right after I make our chicken. Homemade chicken stock is really delicious and healthy for you. I almost always keep some in ziplock baggies in the freezer.

I will debone it and add rice, veggies, some seasonng & a tiny bit of cheese. Or make chicken fajitas out of it. Or chicken, corn & black beans on taco shells or just lettuce. Also you can make a soup out of the chicken. I always "recycle" it.0

One of my favorite ways to use leftover cooked chicken is curry chicken salad. Something like this

Agree with posts above. Soup, tacos, enchiladas, king ranch chicken, chicken nachos, chicken salad, chicken on top of salad, chicken and rice. I am amazed someone would throw half of it out! Good thing you came to your senses!0

I almost always make veggie & chicken soup with the left overs. To be honest, I like the soup more then the chicken itself It's also a great way for me to use up some left over veggies that I have in the fridge before they go bad.0

Yeah, my coworker told me that you can take a fork and kind of shred it. Add some ranch or mayo to it. Dice up some celery and boiled eggs and add black pepper to make it into a chicken salad!0

I take mine and add it to green bean casserole. Add a box of uncle ben's long grain and wild rice (fast cooking recipe) add one can of cream of celery soup (cooks the rice) add a small can of mushrooms and bake in the oven at 325 until the top starts to dry out. DELICIOUS!0
