Looking for yummy vegetarian recipes
Hey guys,
I am being challenged by a friend of mine to become a vegetarian starting march 1 for the rest of the year. I have done alot of research and I think its also very health beneficiary. I need some recipes to try and have so do you have any??

easiest meal ever? Vegan pasta.
I keep a pack of tofurky sausages in the freezer, saute wat ever veggies you want and toss a chopped tofurky in at the end. Mix a little pasta sauce and noodles if you want.
vegweb.com is FULL of awsome recipes, i have tried tons from there.
I definitally recommend there recipe "the best vegan mac&cheese ever...seriously!" its made with tofu but you would never know!

My favourite vegetarian recipe is:
Vegetarian Cottage Pie
(single portion but you can make it up to feed the family too!)
75 g of Quorn/meat free mince
half an onion
1 carrot
half a chopped up brocolli
vegetarian stock cube
100 g of boiled potatoes
25 g of any kind of cheese you want!!
1. boil carrot and brocolli for around 10 minutes and potatoes for 15-20
2. chop onion and put it in pan along with the quorn mince
3. when carrot and brocolli is finished boiling chop up and put in pan with the onion and the mince
4. add your vegetarian stock (i use 2 oxo cubes worth)
5. allow this to simmer for around 10 minutes while you chop the potatoes into slices and turn on grill to a low setting
6. Pour the mince mixture into a bowl and cover with the potato slices
7. sprinkle cheese onto the pie and put into the grill for as long as it takes to melt the cheese
a very simple and traditional recipe made vegetarian with very little effort!!0 -
I have been a vegetarian for several years now, and really love it. I make delicious food every day! It's very easy to do, probably cheaper than eating meat, and I like the way I feel after eating a hearty vegetarian meal. That said, here is a great recipe... it happens to be what's for dinner tonight.

I have also found that vegetarian cookbooks like "Laurel's Kitchen" are a really good resource because they not only have great recipes, but they also go into great detail on the nutritional details and benefits of eating vegetarian.

I recently made this Spicy chickpea tomato soup with vegetable broth instead of chicken broth, which makes it vegan. It's really good!

ohsheglows.com is a great blog with lots of vegan recipes and all can be changed into non-vegan if you wish. I've actually thought about doing something like this but with just cutting out dairy. I like meat, but I could definitively go with out it and not miss it. I think you can pretty much make the things you are used to just with out the meat. something that would be easy to start with would be a 3-bean chili.

I take many normal meals and make them vegetarian, like homemade pizza's can be topped with veggies, instead of meatloaf : lentil loaf, when having pasta I top it with squash and zucchini, if it's something with ground beef or bacon it can be replaced with non meat things that taste good although I don't use them often..0

skinnytaste.com has amazing recipes. There is a section of all vegetarian recipes. Also lots of her pasta dish recipes call for meat sauce and you can just serve it with regular tomato sauce instead.

one of my favorite snack foods is roasted chick peas.. Super easy all you do is take one can of chick peas rinse them and while they are still wet season them with your favorite dried spices and roast in the oven until a little crunchy, I personally like my a little softer. My favorite seasoning is smoke paprika but I have used many others too. Just have fun with it... :happy:0
