    easiest meal ever? Vegan pasta.
I keep a pack of tofurky sausages in the freezer, saute wat ever veggies you want and toss a chopped tofurky in at the end. Mix a little pasta sauce and noodles if you want.

vegweb.com is FULL of awsome recipes, i have tried tons from there.
I definitally recommend there recipe "the best vegan mac&cheese ever...seriously!" its made with tofu but you would never know!

also check http://healthyhunny.blogspot.com/ for random vegetarian, vegan, earth-friendly recipes and info :)

    Thanks that stuff look good!!
  • My favourite vegetarian recipe is:

    Vegetarian Cottage Pie

(single portion but you can make it up to feed the family too!)

    75 g of Quorn/meat free mince
    half an onion
    1 carrot
    half a chopped up brocolli
    vegetarian stock cube
    100 g of boiled potatoes
25 g of any kind of cheese you want!!

    1. boil carrot and brocolli for around 10 minutes and potatoes for 15-20
    2. chop onion and put it in pan along with the quorn mince
    3. when carrot and brocolli is finished boiling chop up and put in pan with the onion and the mince
    4. add your vegetarian stock (i use 2 oxo cubes worth)
    5. allow this to simmer for around 10 minutes while you chop the potatoes into slices and turn on grill to a low setting
    6. Pour the mince mixture into a bowl and cover with the potato slices
    7. sprinkle cheese onto the pie and put into the grill for as long as it takes to melt the cheese

a very simple and traditional recipe made vegetarian with very little effort!!

I have been a vegetarian for several years now, and really love it. I make delicious food every day! It's very easy to do, probably cheaper than eating meat, and I like the way I feel after eating a hearty vegetarian meal. That said, here is a great recipe... it happens to be what's for dinner tonight.

    http://recipes.prevention.com/Recipe/vegetable-lasagna-with-tofu.aspx

I am also fond of perusing the vegetarian recipe selection at www.skinnytaste.com
Try the Arroz Congri! It makes me feel like I'm in a great Mexican restaurant! http://www.skinnytaste.com/2011/02/arroz-congri-cuban-rice-and-black-beans.html

I have also found that vegetarian cookbooks like "Laurel's Kitchen" are a really good resource because they not only have great recipes, but they also go into great detail on the nutritional details and benefits of eating vegetarian.

    Good luck!

I recently made this Spicy chickpea tomato soup with vegetable broth instead of chicken broth, which makes it vegan. It's really good!

I have made a TON of recipes from www.peasandthankyou.com
I LOVE them, and I really am not vegetarian. I did do the vegan thing for about a month and I really liked it. In addition to the site, the blogger has a book that is amazing!
  • ohsheglows.com is a great blog with lots of vegan recipes and all can be changed into non-vegan if you wish. I've actually thought about doing something like this but with just cutting out dairy. I like meat, but I could definitively go with out it and not miss it. I think you can pretty much make the things you are used to just with out the meat. something that would be easy to start with would be a 3-bean chili.

    good Luck!

I take many normal meals and make them vegetarian, like homemade pizza's can be topped with veggies, instead of meatloaf : lentil loaf, when having pasta I top it with squash and zucchini, if it's something with ground beef or bacon it can be replaced with non meat things that taste good although I don't use them often..

skinnytaste.com has amazing recipes. There is a section of all vegetarian recipes. Also lots of her pasta dish recipes call for meat sauce and you can just serve it with regular tomato sauce instead.

    Delish example of this: http://www.skinnytaste.com/2009/01/spinach-stuffed-shells-with-meat-sauce.html

  • one of my favorite snack foods is roasted chick peas.. Super easy all you do is take one can of chick peas rinse them and while they are still wet season them with your favorite dried spices and roast in the oven until a little crunchy, I personally like my a little softer. My favorite seasoning is smoke paprika but I have used many others too. Just have fun with it...

I'm not a vegetarian, but I do make these sloppy lentils pretty frequently in the crock pot...they are easy and absolutely delicious over a piece of Ezekiel bread with some cheese. Oh, also there is a really good vegan cookbook you can download for free if you have a Kindle.

    1 medium-size yellow onion, chopped
1 small red or green bell pepper, seeded and chopped
    1 tablespoon chili powder
1 1/2 cups dried brown lentils, picked over and rinsed
    One 14.5-ounce can crushed tomatoes
    3 cups water
2 tablespoons tamari or other soy sauce
    1 tablespoon prepared mustard
1 tablespoon light brown sugar or a natural sweetener
    1 teaspoon salt
    Freshly ground black pepper

Heata medium-sized non-stick skillet over medium heat. Add the onion and bell pepper, cover, and cook until softened, stirring often, about 5 minutes. Add the chili powder, stirring to coat.

Transfer the onion mixture to a 3 1/2- to 4-quart slow cooker. Add the lentils, tomatoes, water, tamari, mustard, brown sugar, salt, and pepper to taste and stir to combine. Cover and cook on Low for 8 hours.

    Serves: 4 to 6

Are you going straight vegetarian or lacto-ovo vegetarian? If you can have the eggs, this recipe is a regular at our house. The recipe calls for two eggs per person but I stack my tortillas and just have one egg on top which takes the calorie count down to below 400 per serving. http://www.womenshealthmag.com/nutrition/huevos-rancheros-recipe

Welcome to the club!! :) I recommend buying a lot of frozen veggies, they're CHEAP, won't go bad, and will help with any meal you make.

As for dishes, our #1 is random veggie stirfry. They make 'soup starters' or even 'stir fry starters' in the frozen section next to the frozen veggies.

Also, Indian food is traditionally veggie. Many many Asian dishes, such as pad thai are all either veggie or can have tofu substituted in.

Pierogies are a FAVORITE in my house! Mrs T's are sooo yummy! They're hard to spot, look for blue packaging in the freezer section. (Pierogies are a traditional polish dish; basically mashed potatoes in a pastry type shell) Best pan fried but you can boil them too.

Amy's makes a great line of vegan 'tv dinner' type of foods. Those are Vegan! I take this for my lunch if I'm out of leftovers.

Other than that, I'd suggest Whole Foods. We found so many veggie friendly options there I doubt you could go wrong!

Also, as a "HOLY crap I'm hungry and all I have is FAST FOOD what the hell can I eat?" #1 Taco Bell bean burritos, fast and cheap. #2 Burger King has a $1 salad. #3 Veggie Delight at Subway (just ignore the cookies at the checkout!)

Hope this helps! Vegetarian is easy as long as you expect it to be. :) Someone will say "oh well your just going to CRAVE meat" or "that's unhealthy to not eat meat"..... just be ready for it and be your own person.
