I like to build my own salad. I choose some things from each of the following groups:

Crunchy - tomatoes, celery, peppers, cucumber
Protein - chicken, ham, tuna, cheese, nuts, hard boiled egg
Special - marinated artichokes or mushrooms, capers, black olives

I'm not big into lettuce leaves, but I sometimes add a handful of spinach.

Dress with lemon juice and black pepper.

Leftovers from the night before are great! When I make dinner I tend to always make an extra few portions and either pack them up for lunches for my fiancee and I the next day or pack them up and freeze them. Much healthier than any Lean Cuisine, etc. It doesn't take much more time to make extra portions at dinner.

For me I sometimes take sandwiches, salads, veggies and dip, soup, etc. I try to switch mine up a bit so I'm not eating the same things everyday. I don't have a microave in my office so I try to bring things that either don't need to be heated or are ok cold. I also love homemade pizza for lunch. So quick and easy to make!
