1LB of chicken is a serving??

I found this recipe and it looks really good except I would think it would make A LOT! Which is fine I guess for those who want PLENTY of left overs. BUT the recipe says it serves 8 people (or maybe the Duggars?!
)...yet it calls for TWO 4 pound whole chickens (so 8 LBS of chicken)......isn't that a bit too much??
I had planned on cutting the recipe in half and just using ONE 4LB chicken and I assumed it would serve about 6-8 servings.

It looks like two 4 pound chickens.. That's a lot of chicken LOL0

Maybe though when you de bone it, it makes less because it says whole chickens.0

That is what says. But you must remember than with a whole chicken a good deal of the weight will be bones and skin. You won't have 4 lbs of chicken meat.0

It would not equal 1lb of chicken per serving. The recipe calls for 2-4lb whole chickens. Remove the bones and cartilage and any other inedible parts and you have much less than 8lbs of chicken. Probably more like 4lbs which would essentialy be 8-8oz servings.0

When cooking for company, the "traditional" amount of meat to cook per person is 1/2 lb. for boneless meats (e.g. sirloin roast), 3/4 lb. for semi-bony meats (rib roasts, turkeyss, and 8 lb. chickens) and 1 lb. for bony meats (smaller chickens).
4 lb. is pretty small for a roasting bird. It has a greater proportion of bone and gristle per serving, which is why you need more per person. I generally find that 2 4lb. birds is about right for eight people - you may need more if you are feeding hungry teens. Besides, and leftovers can go into a fantastic chicken soup, which can be both low-calorie and delicious.
