Can anyone look at my diary and tell me where I can improve?

I'm on the 1200 calories per day plan and I'm eating healthy but cannot stick to 1200 calories at all. I'm way over on the days I don't manage to fit some exercise in. And most days I can only fit in a 20 minute dog walk due to work, having a toddler, household stuff etc..

me too.. i only have 1200 calories, it could be more when i exercise. but still not enough.. i always eat way over! (0

If your set at 1200 it's ok if you go over to at least 1500. That is fine, if you over indulge try not to exceed 2000 and keep in mind always that 3,500 = 1 lb! 1200 calories is just enough calories for your body not to go into starvation mode which is why they set you at that amount, 1500 is ideal!
For great results wake up extra early and put in that 1/2 hour workout, it gives you extra calories and pushes you forward towards your goals.
