Low-carb chocolate oatbran muffins

Although I'm doing my own version of Atkins, I do find I sometimes, ahem, need a little more fibre. These chocolately treats are from a Dukan Diet recipe but I find they don't affect my weight loss, even if I sometimes have two a day. They are great for a mid morning or afternoon snack as they really fill you up, or with a cup of tea in the evening - or even for breakfast if I am in a rush!

Chocolate Oat Bran Muffins

Ingredients

6 tablespoons of oat bran
2 tablespoons of low carb cocoa powder
2 eggs
6 tablespoons of zero fat yogurt
1 teaspoon of baking powder
Sweetener to taste

Method

Mix all the dry ingredients in a bowl.
Add the yogurt and eggs and whisk until smooth.
Add sweetener to taste.
Divide the mixture equally between 6 paper muffin cases in a muffin tray.
Bake in a preheated oven at 350 degrees F for 15 to 18 minutes.

*** Following a more Atkins approach, I don't worry about the yogurt being fat free and sometimes even use 10% fat Greek yogurt. It's also worth experimenting with the cooking time. I usually test them from 10 minutes onwards as they are definitely better slighty squigy in the middle, like brownies. You can also try adding cinnamon, vanilla or substituting a spoon of whey protein for some of the oatbran ***
