Egg Muffins!

I made these this morning and they turned out great.

Makes 8 Egg Muffins

6 eggs, beaten
1/2 cup diced ham
4 slices Aunt Millie's 12 grain bread, cubed
2 TB dried minced onion
2 TB Herbs De Provence
1 TB Dijon mustard
1/2 cup shredded Swiss cheese

Spray a muffin tin with non-stick cooking spray. Mix the eggs, onion, herbs and mustard together. Add diced ham to eggs.
Divide cubed bread evenly in the bottom of muffin cups. Ladle egg mixture over bread, top with shredded cheese.
Bake at 350 degrees for 20-25 minutes or until eggs are set.

    Sounds great! I make a egg casserole that is similar, but this is nice because it will cook faster. I have to try this for my family. Thanks for sharing! And would be yummy with some veggies added in, broccoli, mushrooms or peppers.

    Wow I think i'm going to make these tonight for breakfasts!

    Does anyone know how long these would keep for? Like...a few days or..? (I'm not really good at judging that stuff lol)
