Pumpkin chili:
1 Pound ground turkey
1 Small onion, chopped
1 Clove garlic, minced
2 Cans diced tomatoes
1 Can kidney or black beans
1 Cup pumpkin puree
1 Tablespoon chili powder, or to taste
1 Teaspoon cumin, or to taste
1 or 2 Chipotle peppers
Black Pepper
Cook the ground turkey, onion, and garlic together to brown the meat. If you used the turkey, there shouldn't be much fat to skim off, but if there is, go ahead and drain the meat/onion mixture. Return the pan to the heat and add your 'maters, beans, spices, and puree. Mix well and let simmer on low for about 20-30 minutes.

I made pumpkin pie jam! Just use the canned pumpkin instead of fruit (You might need to add some water to thin it a bit). Add pumpkin pie spice and (optional) some chopped pecans! It turned out fantastic. Now I can have pumpkin pie for breakfast, on bread or in my yogurt.0

PUMPKIN CHEESECAKE
Cooking spray
1/2 cup graham cracker crumbs (about 4 cookie sheets)
1/4 cup granulated sugar
1/4 cup packed brown sugar
1 (8-ounce) block 1/3-less-fat cream cheese
1/2 cup canned pumpkin
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 teaspoon vanilla extract
1 large egg
Preparation
Preheat oven to 325°.
Coat a pan with cooking spray, and sprinkle pan evenly with crumbs.
Combine sugars and cream cheeses in a large bowl; beat with a mixer at medium speed until smooth. Add other ingredients and mix well.
Pour cheese mixture into prepared pan. Bake at 325° for 35 minutes or until center is just set. Turn oven off, and partially open oven door. Cool cheesecake in oven 1 hour.
Remove cheesecake from oven, and cover. Chill at least 8 hours or overnight.

Spicy Pumpkin Soup
6 servings
15 oz canned Pumpkin
1 cup celery
1 cup carrots
1 cup onion
1/2 tsp table salt
1/2 tsp ground oregano
1/2 tsp dried rosemary
1 can Rotel tomatoes
4 cups vegetable broth
Cook in a pot on the stovetop until the vegetables are soft, then hit it with the immersion blender

I make punpkin granola ALL THE TIME! It's so good and filling to eat in the morning, and the leftover milk is deliciously flavored by the spices! Mmmmmm. Plus it uses less than half a can of pumpkin, so you can make a double batch!

It's pretty customizable. I leave out the pepitas (they do awful things to my stomach), and add sliced almonds and pecans, and use golden raisins for the dried fruit (though blueberries are good as well).
When I put it into MFP's recipe calculator, it's about 120 calories per 4 oz serving, depending on what ingredients you use.

2-3 Cups shredded chicken
1/2 Cup chopped white onion
2 Cups pumpkin puree or 1 can pumpkin puree
4 Cloves garlic, minced
1/4 Teaspoon salt
1/4 Teaspoon black pepper
1 or 2 Jalapeno peppers, quartered
1 Teaspoon chili powder
1 1/2 Cups water
8-10 Corn tortillas (6-inch)
Vegetable oil
1-2 Cups grated sharp cheddar cheese
Preheat oven to 425 degrees. In a blender, puree pumpkin, garlic, jalapeno, chili powder, and water. Pour 1 cup of sauce in the bottom of a baking dish.
Heat a bit of oil and warm the tortillas (one at a time) on a griddle or pan, lightly coating each tortilla with oil. This will keep the tortilla pliable when you roll it. Mound chicken and onions on warmed tortilla, and roll; place, seam side down, in baking dish.
Sprinkle a little cheese on top, then pour remaining sauce over the whole thing; top generously with cheese. Bake until cheese is golden and sauce is bubbling, 25 to 30 minutes. Let cool 5 minutes before serving.0 -

Skinnytaste .com has some yummy stuff I tried this year. Among them are pumpkin spice cupcakes with pumpkins spice cream cheese frosting! SO GOOD! And yummy without the frosting too, 84cals each. And pumpkin turkey chili. My daughter was so impressed with just the smell of it, she asked me to make her a batch without the turkey so she could have some. She is vegetarian.0

I make pumpkin smoothies. It's like pumpkin pie in a cup!
1/2 pumpkin puree
1/2 fat free milk
2 Tlbs uncooked oatmeal (optional)
1 Teaspoon cinnamon (or pumpkin pie spice)
1 Teaspoon Truvia (or other sweetner) to sweeten it up
Blend it all together, add Ice and blend until smooth(add more milk if to thick)
Top with whip cream if you like.0 -

I use pumpkin instead of butternut squash to make vegan mac n cheese.
I'll give you my "cheese" sauce recipe...
1 C soymilk
1/2 can pumpkin
1 T tahini
1 T miso
2 T vegenaise
1/3 C nutritional yeast
1/2 T onion powder
1/2 t granulated garlic
1/2 t smoked paprika
1/2 t dry mustard
1/2 t salt
1 t dijon mustard
You can pour that over noodles, elbow macaroni, spaghetti, whatever pasta you like, or even rice.
Add some chicken, tofu, ham, bacon, or bacon bits (I'm guessin you ain't vegan, so I'm just throwing all the options in there. ).
Also some broccoli, rotel tomatoes and chiles, onion, mushrooms, olives, or whatever you want.
Lots of options there, but this is a good healthy alternative to processed cheese sauce. Great for the lactose intolerant or vegan (I'm both.)

Pumpkin cookies, but I make some subsitutions. I don't know HOW healthy they are, but I know it's better than the original recipe and they are SOOO yummy. I use 1 cup white flour, 1 cup whole wheat flour, and 1/2 cup ground flax seed. I change the sugar to splenda, and the brown sugar to Splenda brown sugar. I omit the raisins (very high in sugar), and add a bit of nutmeg. They are AMAZING!
8 ounces butter, softened
1 cup white sugar
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup pumpkin puree
1 cup rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup raisins
2 1/2 cups all-purpose flour
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.Cream together butter, white sugar and brown sugar until fluffy. Beat in egg, vanilla and pumpkin.
3.In a separate bowl, mix together the oats, baking powder, cinnamon, salt, raisins and flour. Stir into pumpkin mixture.
4.Drop cookies by the heaping teaspoonful on to cookie sheets covered with parchment paper. Bake 12 to 15 minutes or until slightly browned around edges.
5.Remove from oven and place on cooling racks.0 -
