Apple Pikelets 43 cals

I just tinkered with a recipe for Pikelets, and came up with this version: you could leave out the cinnamon & apple and have them plain which is the original recipe.
43 cals each, 7 carb, 1 sugar, 1 fat! I cooked them in a non-stick pan with a spray of canola spray (I didn't count that). I had mine with one teaspoon of (Australian) Golden syrup, it spread over the four I ate :blushing: very nice.
APPLE & CINNAMON Pikelets
2 cups Self Raising Flour
1/2 teaspoon bicarbonate of Soda
1/2 teaspoon salt
1 teaspoon cinnamon
6 teaspoons of Natvia (Sweetener)
1 1/2 cups skim milk
2 50g eggs
1 pink lady apple, washed, grated (skin on)
SIft dry ingredients, make a well in the middle, stir in grated apple, beaten eggs, milk. Stir and pull the edges of the dry ingredients into the middle. Keep going until all combined; beat well. Let the mixture rest for 10 mins, then cook soup-spoonfuls in a non-stick pan lightly sprayed with canola. Cook until bubbles come on the upper side and the edges look less glossy - flip over and cook the other side for a minute or less until browned.
Slide onto plate, cook the next batch the same way, until all the mixture is gone. My mix made 24, which gave the calorie values above.
Pikelets are great for school / work lunches etc, can be eaten cold.
