Anybody got a Deviled Egg Recipe??

I am planning my menu for the 4th of July and would like to do some deviled eggs. I am looking for a recipe that is low in fat and reasonably low in sodium. If anyone has something that involves using hummus, that would be interesting as well. One of my favorite snacks is to hard boil eggs, and when they are cold, cut them in half and remove the yolk and replace it with hummus, but not everyone likes hummus by itself, so I am looking for some creative additions.

    Hi
    I like to mix my yolks with a very large bunch of parseley, salt and good grinding of black pepper. Add just a little milk to moisten (or good extra virgin olive oil). They look green and you can put a half of a black olive on top. Tasty and good for colour.

    I usually make them with light mircle whip. Some times I add pickle relish or dijon mustard. I've been at parties where they were made with mayo(I'd use light) and fresh herbs before. (some were dill, others chives) Post the recipe you eventaully decide. Deviled eggs are always a hit in our family!:smile:

    I mix the yolks with a little mayonnaise, a little sweet pickle relish(drained well), and a tiny bit of yellow mustard. Refill the eggs and lightly sprinkle with paprika. The light version would be light mayonnaise. I wonder how dill pickle relish would taste.

    I'd just use regular or low fat mayo. Possibly some vegannaise.
    Miracle Whip tastes like poop, and light miracle whip tastes like light poop. :sick:

    The hummus idea sounds very, very good actually. I'll have to give that a try next time I make hummus and have eggs on hand. Baba ganouj might work as well. Thanks for the idea!

    I do it with Miracle whip Lite, a little Dijon Mustard and lots of Dill Relish. I also throw out about half of the yolk and don't fill 'em so full. Lots of the cal's and most of the cholesterol are in the yolk.

    For an extra little treat dust 'em with Old Bay seafood seasoning instead of paprika.
