Fabulous Faux Peanut Butter

I found this recipe in a Canadian Magazine this afternoon and rushed home to try it. It was wonderful and much better after the mixture was refrigerated for a few hours. Then I mixed 1 tablespoon of the cooled faux peanut butter with a couple tablespoons of light Cool Whip, added some Stevia and it was just yummy and very filling. I think you could also freeze this mixture.
Here's the recipe:
Ingredients:
1 large carrot
1/3 cup of peanut butter
Pinch of sea salt
1. Cut a large carrot (about) 1 cup into thin rounds
2. Boil until soft
3. Drain carrots
4. Process carrots and peanut butter for a couple of minutes or until mixture is very smooth and creamy. You may need to scrape down the sides a couple of times.

You can do this with any fruity type puree. CCK does banana and pumpkin0

I called it faux because it wasn't exactly the real thing and the salt gave it a bit more taste. Each tablespoon has approximately 30 calories0

Probably tastes just like peanut butter, but the fat/calories will be reduced per serving. And the mixing it with cool whip and splenda probably approximates an old-fashioned fluffer nutter spread.0

Lol I would say bad idea because there is actual peanut butter in the recipe. Even if it's a small amount you could still have a reaction.0 -
