Low-Cal Roast Chicken and Potatoe's
This recipe is enough for two people.
I just came up with it tonight. Its less than 500 calories per person, and its super delicious.
Ingredients:
2 Chicken Breast
4 Laughing Cow Cheese Wedges (light)
2 Cloves of Garlic
2 tbsp Parmesan Cheese
1tbsp of Oregano (fresh or dry)
1 tbsp of Basil (fresh or dry)
2 tbsp olive oil
----
10-15 fingerling potatoes
or
5-8 golden potatoes
1tbsp Olive oil
2 pinch salt and pepper
If you do this right you can make both dishes at the same time on one pan. I put foil on half of a sheet pan. Put one tbsp of olive oil on the foil and spread it.
Then i make a pocket in each chicken breast. In a bowl i mix the cheese wedges, parmesan, herbs, and minced garlic together. Then stuff the filling inside of the pocket. Place it on the side of the sheet pan with the foil. Drizzle the top of the chicken with olive oil, then add salt and pepper.
Cut potatoes into manageable pieces. I just cut the fingerlings length wise since they are already small. Then drizzle with olive oil, and salt and pepper.
Pre heat the oven to 375-400 degrees and bake for about 20 minutes.
It should finish at the same time.
Serve and enjoy.
