Last night I made some great chicken stir fry.
1 Foster Farms Teriyaki chicken breast
1/2 bag of broccoli slaw (has shreaded broccoli, carrots and cabbage)
1/2 bag of snow peas
1 tbsp extra virgin olive oil
1 tbsp reduced sodium soy sauce
1 tbsp Yoshida's Sauce (or any sweet & sour or teriyaki sauce)
Heat oil in skillet. Cut chicken breast into chunks. Cook chicken. Add in broccoli slaw, snow peas, soy sauce, and sweet & sour sauce. Cook unitl veggies are tender (mine took 5-8 min).
I could only eat 1/2 and had the other 1/2 for lunch today. Total is only about 330 calories.0 -

For Dessert: 1 package instant fat free sugar free pudding mix (chocolate! or other), 2 Cups unsweetened Almond Milk (only 40 cal/cup), dollop of lite whipped topping. Divide into four cups/dishes immediately after mixing and refrigerate for up to 3 days. (if it lasts that long!). Don't put the topping on until ready to serve. Only 75 calories.
For added pizazz, crumble a quarter graham cracker on top for a pudding "pie" flavor.0 -

chop up the veggies you do like and saute up, add some chicken or lean meat and sautee till cooked. Add a sauce that you like and either some cooked pasta or rice or diced up sweet potatoes and enjoy...

I make spaghetti and make my own sauce with diced tomatoes, and some tomatoe sauce and some spices and veggies then you can blend it to be smooth so you don't have chuncky if you don't like it.0 -

Try this recipe we made it last week and it was really good and filling and only 130calories.
Enchilada Soup
Ingredients:
3 1/2 cups beef broth
2 cups water
1/2 pound 95% lean ground beef
1/2 cup diced red bell pepper
1 garlic clove, pressed
1/4 cup masa harina (instant corn masa mix) or all-purpose flour
2 cans (10 ounces each) enchilada sauce
1 can (15 ounces) black beans, drained and rinsed
1 cup thinly sliced zucchini
1/4 cup snipped fresh cilantro
2 tablespoons lime juice
Grated Monterey Jack cheese (optional)
Directions:1.Using Easy Read Measuring Cups, measure broth and water; set aside. In (4-qt.) Dutch oven, cook beef over medium-high heat 6-8 minutes or until no longer pink, breaking beef into crumbles. Add bell pepper and garlic to Dutch oven; cook and stir 2 minutes. Add masa harina, enchilada sauce, beans, broth and water. Bring to a boil; reduce heat to a simmer. 2.Add zucchini to soup; simmer, uncovered, 2-3 minutes or until zucchini is crisp-tender. Remove from heat; stir in cilantro and lime juice. Ladle soup into bowls; sprinkle with cheese, if desired.Yield: 8 servings (about 10 cups)

Last night I made crunchy cajun oven fried chicken:
1 boneless skinnless chicken breast (I like to beat it to flatten it a little with a tenderizer, but you don't have to)
1/2 container of plain yogurt
1 cup corn flakes (put them in a ziplock bag and crush them with a rolling pin)
1/4 tsp cajun seasoning
Cover the chicken with yogurt and then dip it in the corn flakes, making sure it's well covered. Please on a cookie sheet sprayed with Pam. Sprinkle cajun seasoning on it and bake it in the 400 degree oven until brown and crispy and juice runs clear. (do not turn the chicken)
Serve with any type of steamed veggies of your choice or a salad. (I love steamfresh veggies you cook in the microwave)0 -
How about breakfast? I sometimes eat this for a quick dinner as well.
French Toast
2 slices of Sara Lee 45 calorie bread (wheat or multi-grain)
1/3 cup egg substitute
Cinnamon (to taste)
2 tbsp Sugar free or lite maple syrup
Pan spray
Spray a large fry pan (10 inch or so) and pre-heat on medium. Meanwhile, pour the egg substitute into a paper plate (or a regular plate), swirl cinnamon in. Dip each slice of bread until all the egg substitute is absorbed, turning to coat both sides. Put slices side-by-side in the fry pan. Cook each side until done, apply syrup and enjoy!
Since this bread is"airy" it absorbs the egg substitute easily. Sometimes I use more. This breakfast lasts me until lunch time because it has plenty of protein from the egg substitute and volume from the bread.
Calories with lite syrup is about 230.
You can cook this at a higher temperature, but if not watched carefully, it will burn.0 -
