Valentine's Day Breakfast :)

So I've decided to make my man a yummy but healthy breakfast for Valentine's Day! Just thought I would share it with you guys!

So the plan is to make heart shaped oatmeal pancakes! :) I'm using a recipe I found on bodybuilding.com but with a few modifications! So heres the recipe with a few mods:

Ingredients:

1 cup fat free milk or water (I'm going to use unsweetened almond milk)
3/4 cup oatmeal
3/4 cup Oat Flour
1 tsp baking powder (optional)
1/4 tsp salt (optional)
4 large whites
1 tsp cinnamon, ground
+ mods: apple sauce to add some sweetness (1/2 cup)
+ some mashed ripped bananas (1 banana)
+ chopped pecans.
+ I may throw a few chocolate chips in one of the pancakes as well :) yumm!

Directions:

Heat milk (or water) until hot, stir in oats and set aside.
Beat egg whites into a stiff foam with hand mixer or blender and reserve.
Mix remaining dry ingredients together and stir in oatmeal/milk mixture and oil (if used).
Fold in egg whites until mixture is well blended.
Spray pan with nonstick spray and cook pancakes until browned on both sides.
+ I will be using a large heart shaped cookie cutter in the pan to make the hearts
Notes: Beating the egg whites into a stiff foam is what makes these pancakes so fluffy. If you do not have a hand mixer or blender, just whisk the whites as best you can by hand. Room temperature egg whites produce the best results. Let your eggs steep in hot tap water for a few minutes to bring them to room temperature quicker.

+ Then i'm going to top it off with fresh strawberries, blueberries, and heart shaped bananas!

    I wish I could do something like that for my hubby, but he leaves at 4 am for work... I am likely not getting up at 3:30 to make him breakfast (half the time when I do he sleeps in too long to eat it anyway). Who knows? Maybe my little one will wake me up and I'll decide to do it anyway... :P

    Went shopping today for ingredients and decided to throw in some white chocolate chips and white macadamia nuts :). Just a little cheat in the name of love lol
