Spicy Peanut Satay Hot Box w/ PHOTO - Freshii clone!

You probably all know Freshii, it’s international and has an awesome nutritional calculator online for designing your own meals as they make healthy fresh salads and rice dishes which is great when you are in a rush however, paying $10+ tax for rice, a tiny bit of chicken and some veggies is just silly. I found a low-cal peanut sauce and decided to make my own. The result? DELICOUS and costs < $2 a serving!
** I forgot the bean sprouts in the fridge at work (I picked them up while walking on lunch) hence why you don’t see them in my photo but I won’t be making that mistake again hence I have included it in the calorie count.
Spicy Peanut Satay Hot Box
2 frozen chicken breasts (I used Costco’s Harvest Creek only 85 cal a breast but higher in sodium)
2 cups baby spinach (I used Walmart’s Fresh Attitude, less cals than Queen Ann’s & .50 cheaper)
2oz baby carrots
1 ½ cups bean sprouts (Foodland Ontario, the kind that’s 30 cals a cup not the 100 cal ones with the sprouted bean)
1 large red pepper (specifically it was 170g)
1/8 cup cilantro
10 grape tomatoes
3 tbsp President’s Choice Blue Menu Memories of Szechwan Spicy Peanut Satay Sauce
½ cup canned black beans, rinsed and drained (I used Great Value Black Turtle Beans)
1 cup brown minute rice, dry (I used Minute Rice)
Directions: grill chicken and prepare rice in a medium to large pot according to package. Wilt spinach by placing in a frying pan with a lid and a little bit of water for approximately 3 minutes. Once chicken is cooked, place aside and grill cored red pepper for 5-10 minutes as desired. Once the rice is cooked, turn off the stove and add in all ingredients (everything should be diced finely except bean sprouts) and mix well. Cover and let sit for approximately 3 minutes then serve.

NOPE! Are things opposite on the other side of the world like toilet water??? Actually, I didn't even check where you are from....but here's a guideline to confirm left side of the dish is for forks.
EDIT: to add, ohhh your are from NC, things do seem quite opposite in the south... LOL! Just kidding0 -

This looks delicious! I make stir fry with a peanut sauce every now and then for dinner, and it's pretty healthy as well! This is the recipe I use:

But I don't use much oil (just a drip so the chicken doesn't stick).
Ends up being about 400 calories per serving--although it doesn't include rice. It's so easy and delicious and fills me up because of the peanut butter!

That looks absolutely amazing. I'm stealing that recipe hardcore. Oh and she's right the fork does go on the left. LOL Years of stinking etiquette classes sometimes do pay off. lol0
