One of my best friends and I did this dessert together for a community chamber of commerce event and they were a HUGE success!!! ENJOY
Diabetic/Cardiac Friendly Strawberry Cheesecake Bites
YIELDS 52 Minis
Mini cupcakes:
1 box Pillsbury Sugar free classic yellow cake mix
1 can Sprite Zero, 12oz
Spoon 1 oz batter into prepared mini muffin tins
Bake as directed @ 325* for 19-23 minutes
*Or until toothpick comes out clean
Set aside and let cool.
To be served with 1 tsp of cheesecake filling
And ¼ strawberry on top
Cheesecake Filling:
1-8oz package of low fat/fat free cream cheese, softened
1 box sugar free strawberry jello
1 tsp vanilla
1 container Free Coolwhip, folded in
Mix and chill until firm
Spoon 1 tsp of filling onto top of each cake
1 Quart of Quartered Strawberries
Juice of one lemon
Soak in 1 box sugar free strawberry jello, prepared
Until jello becomes syrupy, not set
Place one quarter on top of each cake into

96 grams of carbs is more than I can eat in a day, I wouldn't call this diabetic. But that is just my opinion. (I am a diabetic)0

Sugar free products usually have a decent amount of carbs. I recently bought a cake mix (sugar free) that had
34g of carb per serving......
Just saying. For those who are diabetic we have to really be careful about sugar free products, they are sugar free but not
low carb. :sad:0
