Peanut Butter Nuggets
2⁄3; cup corn flakes
½ cup unsweetened dried shredded coconut
½ cup creamy peanut butter or ½ cup crunchy peanut butter
2 tablespoons liquid honey or 2 tablespoons corn syrup
1 Combine 1/2 cup cornflakes, coconut, peanut butter and honey, mix thoroughly.
2 Measure out 2 tablespoon portions, shape into balls. (Dont make too large, should have 18 nuggets)
3 Roll in remaining corn flake crumbs.
4 Place on a plate.
5 Chill until firm.
6 Store in a covered container in refrigerator.

Sounds good - we always made a version growing up that has quick oats:
1 cup quick-cooking oats (or if you have regular oats, you might want to process them a little)
1 cup non-fat dry milk
1/2 cup peanut butter
1/2 cup honey
Roll them in to 24 1-inch balls and eat! Around 74 cal each. They are kind of sweet - I have not made them in awhile - I think I may try halving the honey and add more to taste - that would help with the calorie count. Its really hard to only eat one or two though...0 -
