Dinner Ideas Under 400 calories?

We need a thread to turn to when we don't have many calories left so I just wonder if anyone has dinner ideas that are filling and tasty for under 400 or so calories?

    chicken stir fry w/ brown rice. fish w/ veggies & a baked sweet potato. grilled chicken salad.

    I buy the frozen cod fillets. They are 140 calories. I will make it with different veggies and sauces. I think it is very good. My husband wont eat it though.
    Grilled chicken salad is always a good light meal.
    Shrimp stir fry.
    A can of light soup and a piece of toast.

    am I any help?

    Shrimp or Chicken Fajitas- shrimp or chicken, red & green bell pepper, onion taco seasoning, little bit of evoo, Mission Carb Balance Tortillas, salsa (I leave out sour cream, guacamole and cheese) 2 Fajitas is about 360 cal.

    Chicken Stir Fry- Chicken Breast, 1 bag of broccoli slaw, snow peas, stir fry sauce, low sodium soy sauce (optional). One serving is about 200 cal.

    I guess it depends on HOW you cook these, but they are my 2 new go to meals. They are so good.

    Chicken breast with a side of veggies and a roll. Or my favorite go to meal (I love breakfast food for dinner though) is 3 scrambled eggs with cheese and turkey mixed in, that is 380 calories. You could always add veggies in that as well.

    Big spinach salad with chicken, strawberries, goat cheese, tomatoes, and cucumber with light honey mustard dressing (YUM!)

    Cottage cheese with sliced tomatoes and sliced chicken deli meat

    Egg white scramble with spinach, mushrooms, Laughing Cow swiss, and turkey slices on toasted bread

    Oatmeal with a tablespoon of peanut butter and a scoop of protein powder

    There are loads of different soups which are low on calories and are full of nutrition! I usually have a bowl of soup with pork, broth and a lot of different vegetables and a piece of bread. It's usually around 300-400 calories for me :)

    I am having 4 oz frozen wild salmon, a small baked sweet potato, and the oven roasted asparagus from all recipes for dinner tonight. Total of under 300 calories.

    Cabbage Soup

    24 cups water
    (3) 48 oz. cans College Inn Light & Fat Free Chicken Broth
    24 Wyler's Instant Bouillon Chicken Cubes
    6 Wyler's Instant Bouillon Beef Cubes
    1 medium/large cabbage head, chopped largely
    1 large bag baby carrots
    1 large yellow onion, chopped thickly
    14 stalks celery, chopped into bite-sized pieces
    10 green onions, chopped (entire stalk)
    1 head endive, chopped
    8 garlic cloves, minced
    (2) 10 oz. cans Rotel - Original Diced Tomatoes & Green Chilies
    (1) 14.5 oz can Redpack - Petite Diced Tomatoes With Onion, Celery & Green Pepper
    1/2 cup Worchestershire sauce
    1/4 cup salt
    Black pepper
    Tabasco sauce
    Crushed red pepper
    Garlic salt
    Cayenne pepper
    Parsley flakes (fresh or dried)
    2 Bay leaves

    Pour liquids into a large stock pot. Add bouillon cubes - stir until dissolved. Add all veggies, remaining ingredients & spices/seasonings (to taste). Bring to a boil, cover, lower heat and let simmer (stirring occasionally) for a few hours.

    2 cups = 64 calories


    Asian Chicken Salad

    Baby romaine (or any other lettuce)
    Grilled, boneless, skinless chicken breast, sliced or cubed
    Mandarin oranges
    Sliced water chestnuts
    Large red bell pepper
    Chow mein noodles
    Small red bell pepper, chopped or cut into thin slices
    Low-fat sesame ginger salad dressing

    Mix all ingredients and eat!

    353 calories


    Santa Fe Turkey Burgers

    1 lb. 99% fat free ground turkey
    6 tbsp. salsa
    42 baked scoops tortilla chips, ground
    4 slices kraft fat-free cheddar (or shredded)
    1 cup black beans
    salt
    pepper
    garlic salt
    cayenne pepper
    smoked paprika
    (all seasonings to taste - add your favorites/omit what you don't like)

    Mix all ingredients, form into patties & grill!

    Makes 8 burgers - 158 calories per burger (add 100 calories for a low-cal bun)


    Salsa Chicken

    6 boneless, skinless chicken breasts
    1 can Campbell's cheddar cheese soup
    1 can (14-15 oz.) black beans, drained
    1 jar salsa or 1 can (14-15 oz.) diced tomatoes with onions/celery
    1 can corn
    1 envelope chili or taco seasoning

    Rinse off chicken & place in a baking dish. Top with soup, beans, corn salsa & seasoning mix. Mix around with a spoon until it's all blended and covering all of the chicken.

    You can either make this in your crock pot on low for 6 hours, or in the oven. I covered it with foil at 350 for 2 hours, then dropped the temperature to 300 for a last hour, uncovered.

    Serve with rice.

    1 serving (1 breast) = 374 (add more for rice)
  • 1 butterfinger has 220 Cals.
    So eat 1.5 butterfingers.

    Tonight I had a baked Chicken breast with a side of grilled veggies...it was under 400 cals... And I still have room later for some low calorie popcorn (100 cals for a mini bag). It's Friday night...I deserve a yummy snack! LOL :)
