How do you get oven-crispy chicken?
Options
I've tried a few different recipes, but I seem to have a hard time getting it krispy (I just made Rice Krispies oven chicken-that was pretty good ). What's the secret? I don't think it's the recipe, because no one else complains. Anyone know of any tricks/techniques?
I'd bake plain more often, but le boyfriend, he only eats crispy. So we're at a compromise here.

I coat the chicken in beaten egg whites and then in Panko crumbs with seasonings (salt, cayenne, or whatever you like). Then I bake them on a rack on a cookie sheet. That way they get air flow on both sides. It makes them nice and crisp. Panko also makes a big difference.0

Hungry Girl has a receipe for oven fried chicken using grapenut cereal for the coating. I have not used it recently enough to remember all the ingredients other than the cereal and spices but you can get it on line and its very good. Shake N Bake isn't all that bad calorie wise either but it isn't as crispy.0
