Flourless Peanut Butter Cookies
1 cup peanut butter
¾ cup sugar
large egg
1 teaspoon vanilla extract
Directions:
Combine all ingredients in a medium bowl.
Shape dough into 1" balls.
Place 2" apart on an ungreased baking sheet, and flatten in a criss-cross pattern with a fork.
Bake 8 to 10 minutes at 350.

I've used that recipe and they turned out great. I also tried them with splenda instead of sugar, but they came out kind of dry and less gritty. I wonder if another brand of artificial sweetener would work better.0

these are so good! I think I did them with half sugar and splenda and they came out okay. if they're dry, maybe a lunch pack of applesauce in them?0

I'd like to know this as well. If it only makes a dozen each cookie comes to around 190 calories, which is hardly worth it. But if it makes two dozen it wouldn't be bad.0 -
I make a similar recipe from "One Smart Cookie" but it has
1.5 cups light Peanut Butter
.5 cup white sugar
.5 cup brown sugar
1 egg
Makes 24 cookies
Per cookie: 110 cals, 5.6g fat, 14.1 carbs, 57.5mg sodium, 0.8g fiber
They are delicious!!!0 -
How many does it make?
I got about 24 cookies out of 1 batch. Mine were soft, I think I will let them bake another minute or two next time.........but they were still yummy.0 -

I love these! My mom saw the recipe on Paula Deen and made them for me when I was doing Atkins. I love them soft and chewy! She makes them with Splenda instead of sugar.:)0

from my limited baking experience with eggwhites vs whole eggs:
just using eggwhites will make them dryer. i'd probably use some extra, or maybe add applesauce.0 -
