three-bean slow-cooker chili

So I came up with a nice slow-cooker chili over the weekend. Was thrilled with the results and with the calorie count.

1 lb. lean ground beef, browned
1 medium white onion, diced
1 red pepper, diced
2 cloves garlic, diced
22 ounces tomato puree
1 can Rotel Chili Fixin's Diced Tomatoes and Green Chilies
1 can Bush's Best light red kidney beans, drained
1 can Bush's Best cannellini beans, drained
1 can Rosarita Premium Seasoned dark red kidney beans
2 tsp chili powder
1/2 tbsp parsley flakes
1 tsp sale
3/4 tsp cilantro
1/4 tbsp black pepper
3/4 tsp oregano
3 tsp Sriracha Hot Chili Sauce


serves: 8
calories: 257

as with most crock pot recipes, just drop it all in the pot and mix. let it go on low for 8 hours.

I opened the lid a bit in the last 30 minutes to get it to the right consistency, so it wasn't quite as soupy -- but that would be personal taste. only thing I might do differently is make it 1 1/2 lbs. of ground beef this next time.

and just a crock pot tip ... get the liners. they make life soooo much easier.

  • Sounds yum! I'll have to give it a go! Maybe even try it with ground chicken or turkey, as much as I love me some beef, we've been doing these

    That sounds great. I make almost the same recipe except I use black beans and toss in a chicken breast. Let it cook overnight and the next day you can shred the chicken with a fork. Definitely going to try your recipe. Thanks!

    yeah, you could cut the calorie count even more with turkey. but at 257, I figured might as well go tried and true beef.
  • Slow cooker is a wonderful cookware. Recipes made from it are really delicious.

    honestly, I'm not exactly sure on serving size. I made it and then ladled it out evenly into eights, some in bowls for folks over that day and some into tupperware for leftovers. It was a pretty solid bowl, though. I'd guess a cup and change, easily.

    I'll make it again soon, I'm sure. I'll measure the whole batch to update an exact serving.

    I made it tonight with a few minor tweeks because the store didn't have the same brands. DELICIOUS! I made 13 cups and it came out to 178 calories per cup. So filling! If you like Jalepeno Poppers I have come up with a low cal/low fat version.

    I have lived in Southern AZ most of my life and am picky about chili of any kind. I like it so well I gave some to my grandparents for dinner. I didn't think any beans could be as good as my grandma's but she just called and said DELICIOUS! LOL

    I couldn't find cannellini beans, so I used Bush's Fiesta beans, added more cilantro (we grow it in the back yard hehe), purple onion instead of whtie, and a large can of Rotel instead of puree (mostly because I forgot to get the puree at the store).

    mostly still there, then. they are sometimes called white kidney beans, too. and I might go with a sweet onion next time, just to see what the flavor change is.

    oh, yeah. I know all about the beans. ha!

    great northern wouldn't be bad in this or any chili recipe. mostly because it doesn't have a ton of flavor on its own. it will generally take on the flavor profile of whatever you are cooking it in.

    the one I might try in my next chili is the butter bean, just to give it a different twist.

    Let me know how that goes for ya, I can't handle the texture of butter beans or lima beans. (just shivered lol) But have you made a "white" chili? It has chicken and white beans but no red or brown beans. :)

    no ... never did. seemed to be an assault to real chili.

    Depends on how ya make it! Add some fresh roasted, hot green chile and enough garlic... ok you're right it's not "real" chili but it tastes dang good! lol

    I have about a half dozen chili recipes. my best uses stew meat instead of ground. I haven't punched it in since I started to see what the numbers look like on here, though.

    Yeah let's not get into the "beef" topic. I am a carnivore and honestly that is the only thing I will struggle with giving up, ribeye and baked potato and/or pot roast and mashed potatos. Sigh
