Ok so I like to make protein pancakes on my days off or late starts for work. Today I made a bit of a twist on my usual pancakes and made little patties with the avocado that needed eating
These might sound odd but were so tasty, and very very filling.

The recipe can be tweeked to your liking but I will put my version (that I kind of made up on the spot!)
Ingredients
50 grams very ripe avocado
75 grams fresh pineapple
1 large egg white
10 grams protein powder (I used unflavoured)
20 grams jumbo organic oats
1 tsp ground cinnamon
Method:
Mash the avocado in a bowl to a paste, and chop the pineapple up really fine adding it to the avocado. Mix in the egg white then the dry ingredients
Heat up a large pan with the oil of your choice, I chose 1kcal spray (8 sprays)
Flip over when nice and brown on each side.
The insides of mine were still quite soft, if you wanted a firmer pattie then cook for longer on a lower heat or transfer to oven
I served mine with fat free greek yoghurt and some agave syrup
Nutrition:
5 patties= 295 calories, 26grams carbs, 13grams fat, 18grams protein
These might sound odd but were so tasty, and very very filling.
