This is my absolute favorite soup and it's good for me!

Onions - Raw, 0.5 cup, chopped
Rotel - Original Diced Tomatoes & Green Chilies, 1 container
Ortega - Diced Green Chilis, 4 tbsp
Full Circle Organic - Vegetable Broth, 4 cup
Rice - White, long-grain, regular, cooked, 2 cups
Lime Juice - Fresh, 1 TBSP (ounce)
Generic - Low Fat Cheddar Cheese, Shredded
Low0fat tortilla chips

Cook up rice. In a large saucepan, cook onion and chilies until tender. Add broth, rice, and Rotel. Mix well. Bring to a boil. Reduce heat, cover and simmer for 20 minutes. Stir in lime juice. Top each serving with chips and a sprinkle with low-fat cheese.

You can cook up 5oz. of cubed chicken breast (cook ahead and put in with the broth, rice and Rotel)and substitute the vegetable broth for chicken broth for a non-vegetarian meal.

  • Never had tortilla soup, but I think I shall try it out. Been eating Chinese style food mainly for a very long time, thinking to go Mexican style for a while to try something different :)

I am so glad you all like this. I just made it tonight and it's always so good. I forgot to say that I usually use brown rice instead of white rice but that is what the recipe called for so that is what I put down. Also, I used to not be a vegetarian and I made this recipe with the chicken and it was so so good. It took me a while to not miss the chicken :)

I hope you all enjoy it!

Would be good to add some cumin, and a splash of lime juice, too.

I made this tonight, with a few modifications. I thought I'd share the recipe that I came up with.

Total calories per serving (2 cups) is 151 calories.
Total calories per serving (2 cups of soup with the toppings added) = 451 calories.

I made it in a large crockpot, put all soup ingredients in, for 12 hours on low, (though 6 hours on low is plenty. Also you could do it on high for 3 to 4 hours, till chicken is cooked all the way through basically). Take the chicken out at end of cook time, (it will be very tender and fall apart), and use two forks to pull it apart/shred it.

    SOUP INGREDIENTS:
1 can of Ortega black beans (drained and rinsed)
1 can of Libby's whole kernel corn (not drained)
    3 cans of Campbell's chicken stock/broth.
    2 cans of water.
2 cans ROTEL. 1 of the hot and 1 can of regular.
1 skinless & boneless Tyson frozen chicken breast with rib meat, approx. 6 oz.
Onion (yellow) - Raw, 1/2 cup, chopped
1 can Ortega - Diced Green Chilis
    1 TBSP ground black pepper
    1 TBSP cumin
1 TBSP garlic salt (garlic powder can be used or 1 clove fresh garlic crushed in place of the garlic salt for less sodium).

    TOPPINGS (as desired):
Lemon juice 1 TBSP, added it directly to the bowl of soup when serving.
1 TBSP of Wholly Guacamole original to each bowl
1 TBSP of sour cream to each bowl
1 TBSP shredded mozzarella to each bowl
Frito's Original Corn Chips 1 serving (32 chips)
