I love this recipe! i hate zucchini but i love it in this recipe! I make it more then anything else. It's so filling and the serving size is huge (i can't even eat it all!)
Servings: 4
Serving size: 2 cups!!!
Calories: 439
Fat: 7g
2 cloves garlic, minced
3 medium zucchini
10 ounces Fettuccini pasta
1 tablespoon all-purpose flour
1 cup col skim milk
1/2 cup evaporated skim milk
1/2 teaspoon salt, more to taste
3/4 cup freshly grated Parmesan cheese
1/4 cup finely chopped fresh parsley leaves
Start cooking noodles
Slice zucchini into strips no bigger then the fettucini noodles (i just use a grater...much faster!)
Spray some PAM on a skillet, add garlic and saute for 2 minutes, add zuchini and cook for 5 minutes or until tender. remove from the skillet and into a bowl
Stir the flour until the milk and pour into the skillet, stir constantly until it boils, add the evaporated milk, salt, and parm cheese and cook until the cheese melts. Add the parsley
Drain the noodles, add the zucchini with the noodles and pour the sauce in. Dinner is done!!!
