Hiii :) How are you?

Do you have any sugestions for an healthy lunch? I can't think of what to make... i just want it to be healthy and low on calories :$

    salad with grilled chicken, or tuna - fast and easy

    Mushroom soup

    Slice some mushrooms and hop a clove of garlic roughly and season all with salt and pepper - seal all in some foil and place on a baking tray in the oven for approximately 15 mins. Then transfer to a pot and add 16oz of stock bring to the boil and simmer gently for 15 mins. Remove half of the soup and blend it before returning it to the pot. Adding a spoonful of fromage frais is optional.

    Baked sweet potato (or microwaved sweet potato for speed) with salad, rice cakes with smoked salmon, cottage cheese and cucumber, Ryvita with tuna (use unsweetened plain yoghurt instead of mayo, really yummy but much lower cal). Quinoa, bulgar wheat or cous cous with vegetables, fruit and yoghurt. These are some of my favourites.

    i've gone for the salad, but i didn't have any tuna at home, so i decided to add some soft light cheese instead! :) hope it tastes nice, thank youuu :D

  • i eat a lot of chicken..i typically cook up about 3lbs of boneless skinless chicken breast the beginning of the week and slice it up , put it in a container and in the fridge... then i can grab it out to make a sandwich, salad, meal ect... for lunch i usually make a chicken sandwich on an arnold's thin or bagel thin. and throw some fruit in my lunchbox too..sometimes i throw chicken and brown rice together in a container..sometimes i throw salsa and chicken together..it varies but it works. its basics

    Toss together tuna, salad leaves, fresh basil, tomato, borlotti beans, yoghurt and carrot. For some crunch add some toasted pumpkin and flax seeds - its delicious and nutritious :-)

    Pure cod fish fingers (3) and cherry tomatoes on wholemeal bread. I use a 400g loaf, its much smaller than the average size bread, which means lower in calories! This comes in at about 320 calories, but ofcourse it all depends on the bread and fish finger brand you are using. I like to have tomato ketchup with mine :)

    Also Cous Cous cooked in chicken stock with herbs, onions, a tomato, salt if needed. Add any vegetable you want. My particular recipe with 60g of cous cous per serving comes out at 265 calories (which includes all ingredients mentioned) - To make it a lunch rather than a side (but it is quite a lot depending on how long you cook your cous cous for) you can add salad such as cherry tomatoes, cucumber, lettuce etc.

  • Make up a batch of beans and rice. I put in some sort of meat - ground turkey or even ground beef. It is a way to use up leftover meat. Add cumin and chili powder and salsa....voila. It tastes good even without cheese.
