Broccoli Cheese Soup

I had been craving some cream of broccoli soup, so I decided to give it a shot with what I had in the fridge. It ended up being under 200 calories, even though I used a bit of half and half, along with regular cheese. It was so tasty and filling, I thought I would share.

These veggie amounts are just an estimate.

3/4 cup chopped broccoli (stalks and florets)
1/4 cup chopped carrots
Chopped onions (I used about 2 TB)

I cooked these in about 1 cup of water until they were how I like them, just a bit of crunch.

I saved back about 3/4 of the water and added:

1/2 TB corn starch
1 1/2 TB half and half
1/2 Cup 2% milk
1/4 Cup Kraft Triple Cheddar
Salt and pepper to taste

Stir over low heat until it thickens a bit. Yum!

Next time, I will be cutting out the half and half and using low-fat cheese to cut the fat content. Here are the stats minus the veggies.
