Cinnamon Roll Baked Oatmeal
My friend Shauna shared this with me. It's in the oven now and of course I licked the spoon!! It tastes yummy!!
Cinnamon Roll Baked Oatmeal Cups – Adapted from Chocolate Covered Katie
Ingredients {makes 2, 1 C servings, or 4 1/2 C servings}
Baked Oatmeal
1 C old fashioned oats
1/2 C applesauce {unsweetened}
1/2 C milk
1/2 tsp. vanilla extract
1 tsp. cinnamon
3 T maple syrup
1/8 tsp. sea salt
Frosting {optional – but wonderful!}
1-2 T cream cheese {Neufchatel preferred}
4 T powdered sugar
1/4 – 1/2 tsp. vanilla extract
Optional: milk, added until desired creaminess is reached
Directions
Preheat your oven or toaster oven to 375.
Mix together the 1 C oats, 1/2 C applesauce, 1/2 C milk, 1/2 tsp. vanilla, 3 T maple syrup, 1 tsp. cinnamon and 1/8 tsp. salt in a large bowl.
I made some modifications and came out to 155 cals for the oatmeal alone: unsweetneed soy milk and honey instead of milk and maple syrup. You can probably cut back or omit the "sweetener" as it is plenty sweet from the applesauce.
I'm just going to top with some greek yogurt.

It was pretty darn good: excellent taste profile. You definitely can skip the added "sugar" and just drizzle honey on top if you want it a bit sweeter. I did think it was a little dry, so I'll probably add some extra milk next time.0
