Chicken Breast Dinner Advice Needed

QUESTION: Chicken breast and veggies is a popular healthy meal choice but how do you prepare it? What do you use for seasoning? Can anyone share some yummy recipes? I need to go back to planning meals and I'd like to simplify my menu. HELP! Thanks everyone!
Note: I don't have a grill (although I do have a George Foreman) so I'd love recipes using the oven and stove top.

you can put the chicken in a crop pot with some water and taco mix and make chicken enchiladas with wheat tortillas. light on the cheese. little sour cream.0

I like grilled chicken with salsa and fat free sour cream.
also, sauteed bell peppers, & onions and sour cream. MMMMmmm.0 -
I have chicken sooooo often.
You can mix parmesan cheese, bread crumbs, and Italian seasoning together and have a shake-and-bake style chicken.
I sometimes either bake or fry pieces of chicken and coat them afterward in a mixture of low-fat mayo, Frank's red hot sauce, and Cajun spices. This makes a great buffalo-style chicken rap or sandwich or is fine on its own.
You can marinate the chicken breast in Italian salad dressing or BBQ sauce or Sun-dried Tomato Oregano salad dressing then either grill it or bake it.
Quesadillas are always good.
I sometimes bake chicken breast with poultry seasoning and Italian seasoning, then top it off with melted cheese (low-fat, of course) and salsa. Very tasty!
In a slow-cooker, you can mix a can of low-fat cream of mushroom soup, a cup of salsa, and a package of taco seasoning with chicken breasts.
As for veggies, my go-tos are edamame, broccoli and cauliflower with light Cheez Whiz, corn, peas, grilled asparagus, Caesar salad (with light dressing, just a sprinkle of cheese, and homemade croutons if you prefer - I usually skip the croutons), spinach salad with raspberry viniagrette, or Greek salad (Mine is super light. Just peppers, cucumbers, and diced tomatoes with light Greek salad dressing and a sprinkle of low-fat shredded cheese).

Broiler works for me. A little kosher salt & fresh cracked pepper, garlic powder, sometimes add a dash of cumin too for a slightly smoky flavor. Add a dusting of cayenne pepper for heat if like it spicy. I'll do the same thing out on the grill, but you could use the george foreman as well.
One thing I haven't done in a while is take a whole chicken and toss it in a crock pot on low for 8 hours. No seasoning required. If you want, try putting a couple sprigs of fresh rosemary in the cavity of the bird. It will be fall apart tender when it's done. Pull the skin off and the meat will fall off the bones. An average chicken will fit nicely in a 3-4 qt crock pot.0 -

I cook chicken on the George Foreman. I season it with Mrs.Dash lemon pepper. Mrs.Dash has noooo sodium! YAY! And some garlic powder. I change the seasonings up though. And then I have a rice cooker too so I make brown rice and steamed veggies. MMMM0

2 chicken breasts, diced into bite sized pieces
1T minced garlic
1T EVOO
4 cups mixed veggies (We use Bird's Eye Normandie Blend.)
Cajun seasoning*
Sprinkle 1-2 T of the seasoning over the diced chicken and mix. Heat the oil in a pan. When hot add the garlic and saute until lightly browned. Reduce heat to medium-high and add chicken. Saute until mostly done. This takes about 4-5 minutes. I usually cut one of the bigger pieces in half and when there is just a little pink in the middle, add the vegetables. Reduce heat and cover. Allow the veggies to steam/saute by occasionally shaking the pan or uncovering and stirring. I usually serve over brown rice.
Serves 2 with a little leftover.
*I have my own homemade, but you can buy premade in the store.0 -

Spray Oil to base of a frypan with a lid, fry Breast pieces to seal, toss some chopped onion in, and green& red capsicum a few mushrooms and a splash of dry white wine, salt& pepper. Simmer for about 5 mins then add a small tin of chopped peeled tomatoes,sliced zucchini, a few fresh herbs or dried Italian mix herbs and let it cook a little more with the lid on until all is cooked (about 10 mins). mmmmmm delicious!!!
Great with boiled rice, or mashed potato.0 -

Grab a piece of tin foil, wrap chix breast with red, yellow, orange, and green pepper strips, onions, garlic, and lemon. Bake at 375 degrees for about 30 min. Serve with quinoa or beans, and a salad. So Yum!!!
Did this with a tilapia and topped with cilantro.
Result:
I served this with roasted root veggies (carrots, parsnips, and rutabega) and roasted julienned potato

I usually marinate chicken over night if you have time. I use salt,ginger,garlic,Carom seeds,cumin seeds,black pepper corns,lemon juice,chilli powder,cumin and coriander powder and coarsely grind it and marinate chicken over night or from morning to evening and cook it in non stick pan covering it for 15 mins. The chicken cooks in its own juices and at the end once the chicken is cooked and water is dried up..just spray little oil and cook it in high flame to give brownish color....0

I sauteed some chicken tenders (smaller breast pieces) in a non-stick pan sprayed with olive oil spray. I seasoned the chicken with some oregano, basil and garlic powder. When they were almost cooked, I put some Trader Joe's bruschetta on them and sprinkled a little shredded parmesan cheese on each piece. The bruschetta comes in a jar and is mostly chopped tomatoes and herbs. The bruschetta is very low in calories and fat. It was really good. Oops, I forgot that I also sauteed about 6 ounces of sliced portobello mushrooms with the chicken.0

I do stir fry's and soups
basically with the stir fry you can cook the chicken, then slowly add various vegetables (the ones you want to cook longer go in first)
I also use basil, oregano, smoked paprika, lots of garlic either fresh, minced, or garlic powder.
sometimes some lemon or something
for the soup I will take water or chicken broth, season it with some of those same seasonings, get it boiling, then put the chicken in, then the veggies after a little while
if you need some extra carbs you can add rice to the stir fry or noodles to the soup. or potatos to either one. Both dishes are very quick and easy. I weigh each ingredient as I am putting it in the pot or wok.0 -
There is one more easy and quick recipe..
Place chicken pieces,tomatoes,onions,ginger,black pepper corns, green chili and garlic crushed,salt in slow cooker and cook it for 30 mins till cooked. Take a non stick pan and pour 1 tsp oil,,,add some curry leaves and coriander powder and roast till the rawness is gone. Add the cooked chicken and let it boil till it thickens a bit. Garnish with coriander leaves and have it with brown rice or bread.0 -

My new favorite is Lemon Chicken in the Crock Pot. It calls for a pat of butter in the bottom (I have used it and not and the only difference is it seems to thicken the "sauce" a bit), 4 chicken breasts, the juice of 2 lemons, then sprinkle a packet of Good Seasons Italian Dressing mix. 6-8 hours on low and it's my family's new favorite chicken! We love it with brown rice and broccoli!0

Preheat a pan with 1 tablespoon of olive oil until just barely smoking. Preheat your oven to 350.
Dry two chicken breats. Yes. DRY. Not wet. DRY THEM
Stick them pretty side down into the skillet. Do not move them.
On the side, combine 1/4 cu finely chopped cilantro with 1 tablespoon of minced garlic, 1 tablespoon honey, and the juice of 1 lime.
Flip your chicken. It should be GOLDEN brown and crispy on the bottom.
Add a touch of salt & pepper to your cilantro mix, as well as the zest from that lime.
Slide your chicken into an oven safe baking dish and pour the cilantro lime sauce on top.
Bake 15 minutes at 350. Remove the dish and tilt to one side, spoon hot sauce over the top of chicken.
Return the chicken to the oven.
MEANWHILE :
Sautee onions, peppepers, galic, celery in the leftover olive oil from the chicken.
Add to precooked quinoa, along with the zest & juice of another lime.
Add hotsauce to EVERYTHING.
Eat and enjoy, while moaning : this is soooooooooooooooooooooooooo good!
Slide your chicken into an oven proof0 -

I like them grilled or sauteed in EVOO. I don't use seasonings. I think they taste good plain lol.0

I like to keep it simple, quick and easy.
Cut boneless chicken breast into thin slices. I use 4 oz. (about halve of 1 chicken breast fillet)
Brown chicken in non-stick skillet
add multiple vegetables...
1 carrot - cut into 1 inch pieces
4 oz cauliflower
4 oz green vegetable (green beans, broccoli, asparagus , etc)
1 medium summer (yellow) squash
2 oz sliced mushrooms
Turn heat down to mid-High, add a couple of tablespoons of cooking wine. (optional )
Season with ground black pepper, paprika, and parsley flakes.
Let cook 5-10 minutes depending on how you like your vegetables.0 -

Great ideas everyone! There's a shrimp dish I make that I love that I think I will adapt to chicken breast.~
Spicy Chicken with walnuts and spinach.
Cook chunked chicken breast and thin wedges of onion with garlic until almost done. In separate pan, toast walnuts. To chicken add spinach, chopped cilantro, chopped green onions, lemon juice, and red pepper flakes to taste. When spinach is melted, add toasted walnuts to pan. Serve by itself, or with pasta, rice, quinoa, etc.0
