Has anyone got healthy receipe for a filling omelette

    Loads of veg + lean meats - courgettes, red onion, peppers, leeks, spinach (with a bit of nutmeg & garlic yum), chicken breast, fine green beans, asparagus, fish - omlettes are so versatile, but mix and match all of the above (or use all ingredients at same time except tuna and chciken!)

    Saute the vegetables first till sightly softened and tender (or crunchy if you prefer that) then add the beaten eggs and seasonings of your choice + cheese if you want an extra hit of flavour.

    I just use anything I've got, they're brilliant!

    personall favourite is LOADS of mushrooms with sun-dried tomato's and a little low-fat cheese. Also, if you whip up the egg whites before folding in the yolk, it feels like you are having a lot bigger meal than you actually are!!!!
