Seeking Healthy Pork Carnitas

I do not have a direct recipe, but I recently made a pork tenderloin roast in the Crock Pot and it was very healthy and "peeled" like carnitas meat. I actually made my own carnitas with low carb tortillas out of it! Not sure about the seasoning, though.
The meat itself was only 30 cal per ounce! Good stuff.

I love this website so much. I haven't actually made these, but I have tried a few of her recipies before. Pair the carnitas with her healthy lime rice for a knock off version of chipotle (and some really good burritos!)0 -
