Sweet potatoes

I am looking to start adding more sweet potatoes to my diet. Ive had them before, but only in fattening, sugary dishes. So what do you put on yours and how do you cook them? :)

    I love to peel and cube , toss with olive oil and cajun seasoning, and bake until crisp on the outside and tender in the middle..anywhere from 15 to 30 minutes depending on your cube size. My favorite way to eat them.

    I make sweet potato fries, I toss them lightly in EVOO, a little chili powder, cumin and a bit of brown sugar, salt and pepper.

    Another easy option is to bake it or roast it with Parnsips, onions and other root veggies

    I peel them and cut into rounds about 1/2-1 " thick. Spray with cooking spray and fry in a pan until brown on both sides and tender when you stick a knife in the center. Sprinkle with a little salt and pepper. Everyone loves them.

    One of my favorite things to make with sweet potatoes is sweet potato hash. I shred the potato with a grater and add some onions and turkey and I let it brown a lot- its yummy and pretty low cal.

    Slice them in quarters - Cayenne pepper, a dash of salt - put in the oven until brown.

    Just made some tonight this recipe is good with pork,chicken and really good with steak

    SWEET POTATOES WITH BOURBON
    EMERIL’S
    2LBS. SWEET POTATOES
    1/4C. UNSALTED BUTTER, CUT INTO PIECES
    1/4C. HEAVY CREAM
    2TBS. BOURBON
    ½ tsp. SALT
    ¼ tsp. PEPPER


    1. PREHEAT OVEN TO 350 PRICK POTATOES WITH FORK; ARRANGE ON FOIL-LINED BAKING PAN. BAKE 1 HOUR OR UNTIL TENDER. LET STAND UNTIL COOL ENOUGH TO HANDLE.
    2. PEEL POTATOES. TRANSFER TO FOOD PROCESSOR. ADD BUTTER. PROCESS UNTIL SMOOTH. ADD CREAM,BOURBON,SALT AND PEPPER; PULSE JUST UNTIL BLENDED. SERVE, WITH SNIPPED CHIVES, IF DESIRED.

    MAKES 4 SERVINGS 295 CALORIES, 3PROTEIN, 34 G CARB, 17 G FAT, 4 G FIBER
