Ok, for the first time, I made zuchinni "pasta" and I have to tell you...I may never eat "real" pasta again. It was so delicious!!! So much flavor!!! You have to try it!!!!

    A Healthy Pasta Alternative
    Craving pasta? Well, even though you've stepped up your workout routine, it's not time to start carb loading yet! I've swapped your usual pasta for a low-carb and highly nutritious version made with zucchini.
    Veggie Pasta With Italian Chicken Sausage

    Ingredients:

    2 small zucchini
    2 tablespoons extra-virgin olive oil
    Salt and pepper to taste
    1 garlic clove, diced
    1 cup diced tomatoes
    1 teaspoon oregano
    1/2 pound cooked Italian chicken sausage, sliced into small pieces
    1/4 cup grated Parmesan cheese, or to taste
    Instructions:
    Using a vegetable peeler and turning the zucchini as you go, slice the zucchini into ribbons.
    In a skillet, over medium heat, sauté zucchini in 1 tablespoon of oil until it's soft and the edges are clear.
    Add salt and pepper to taste.
    Heat 1 tablespoon of oil in another pan, over medium heat, and add garlic.
    Sauté for a minute, then add the tomatoes and oregano.
    Simmer for a few minutes, then stir in the sausage.
    Spoon sauce over the zucchini. Sprinkle with Parmesan.
    Makes 2 servings

    Nutrition information per serving: 309 calories, 29 g total fat, 9 g carbohydrate, 28 g protein, 324 mg sodium.

    Zuchinni or spaghetti squash..........which I love both.

    ZOMG! I just made this and it was awesome. . .so I'm bumping it.

    I added two tablespoons of tomato paste and 4 oz of red wine for extra deliciousness. Even my husband, who doesn't share my eating habits loved it.

    I bought a special "julienne peeler" (zyliss brand) that made very thin, spaghetti like noodles. Well worth the 6 bucks.

    Another thing you can make is spaghetti squash. very delicious!!! just cut it in half and bake it as it says on the sticker, and once you take it out of the oven use a fork and scrape it out, and voila you have some awesome pasta!

    Pretty good recipe. I added some marinara sauce as well for more sauce, chicken breast instead of sausage and feta cheese instead of parmesan. :tongue:

    It is, I might even do it again tonight. I boughta whole bunch of zuchini at the farmer's market yesterday and am going out of town on Friday for a week, so I need to eat it asap :happy:

    I just saw this on some fitness show and thought it sounded good, despite not being a zuchinni fan. I'll give it a try - thanks for posting the recipe!

    I have 2 zuccini plants in my yard. That's one too many. I don't worry about shredding the z uccini. I just slice it up and add the sauce. For protein and variety I alternate between ground turkey, Jenny O lean smoked sausage, and chicken breast.

    Occassionally I get really large zuccini if I forget to pick for a few days. I just cut it down the middle, scoop out the seeds, fill it with meat sauce, and bake it until the squash is tender.

    For spagetti I like to use spagetti squash. I actually looks like I am eating pasta but tastes better.

    Doesn't spaghetti squash take FOREVER to cook tho? I love it with a little butter, garlic and pepper, but never make it because it takes so long to bake.

    Poke some holes in the spaghetti squash (you'll need a sharp knife for this) to prevent exploding.

    Put in the microwave on high for 10-12 minutes.

    Handle carefully, cut it open and enjoy the goodness.:flowerforyou:
